Beef fillet steak (AKA beef eye fillet, fillet steak and beef tenderloin) is the most tender beef cut available. The fillet muscle is located at the lower middle of the back, and forms part of the sirloin. This muscle is practically un-used by the animal, so the tenderness is unrivalled by any other cut.

Fillet steak is lean, tender and healthy. It can be roasted whole, sliced into steaks, or wrapped in bacon to create the legendary filet mignon. Try not to overcook the meat, as this tender cut can become dry when overdone. Fillet steak tastes incredible by itself or combined with butter-based sauce or red wine jus.
